Honey Banana Bread

The best, moist and easiest banana bread sweetened with ripe bananas and honey.

This must be one of the most beautiful recipes that can be made with softened, spotty, over-riped bananas.

I love baking and eating banana bread really much so that I made various recipes so far. In the past, I was baking it with brown sugar and butter. However, the change in my diet led to the birth of this more healthy recipe. Butter is replaced with coconut oil, sugar with honey, and white flour with spelt flour.

Regarding the consistency, it matters for me to bake a moist cake inside and crispy outside. It should be also as simple as possible. I don’t like that much to add additional ingredients like walnuts, dried grapes or chocolate chunks. So, this is a classic banana bread recipe that I mix the ingredients quickly and put it in the oven in five minutes. But the real fun starts after cooking;

Banana Bread Eating Tips

– Prepare a chocolate mousse as I always do

– Make a ganache sauce with dark chocolate and heavy cream to cover

– Spread chocolate mousse / tahini & honey / peanut butter & honey
on your slice

– Or just eat it warm with a smear of butter and a drizzle of honey!

Ingredients

185g spelt flour, or all-purpose flour

4 ripe bananas, mashed

50g coconut oil, melted

100g honey

2 eggs

1 teaspoon baking soda

1 teaspoon ground cinnamon

1/2 teaspoon kosher salt

You’ll also need

9×5 inch bread loaf pan
One large mixing bowl

Method

1. Preheat your oven to 350 degrees F.

2. Grease a 9×5 inch bread pan.

3. In a large mixing bowl, stir together the mashed bananas, coconut oil, honey and eggs until combined.

4. Add the flour, baking soda, cinnamon, and salt, mix until just combined and pour the batter into the prepared bread pan.

5. Bake for 50-60 minutes, or until center is just set.

6. Remove and let cool for at least 30 minutes before cutting.
